MCAT: 40 (14/11/15)
Undergrad GPA: 3.38 with significant upward trend over the last 2-3 years.
Science GPA: ~3.5. Haven't calculated exact value.
Undergrad Major: Animal Biology, with minors in Writing and Chemistry.
Graduate Major: MS in Biochemistry; degree in progress.
Volunteer work: A little here and there. Nothing outstanding.
Shadowing: Currently shadowing an anesthesiologist for 8-10 hours every couple weeks. Will have ~100 hours by the time apps are due.
Research: Yes, but nothing published yet; probably will be second author on one or two papers by the time interviews occur.
ECs: I play online chess, contribute to Wikipedia, read a lot, and have written five novels (none published) over the past couple years.
What I'm looking for:
I know my MCAT score sets me apart, and because of that, I'm looking to apply to some top-tier schools and a couple mid-tier schools (call them my 'safeties'). I am especially interested in schools with large scholarship funds, as I would like to graduate with less than a gazillion dollars in loans.
My list so far:
-My state school (within miles from my family)
-UCLA Geffen (Recently received a huge donation from Mr. Geffen which will allow at least 33 students a year to receive full-ride merit-based scholarships.)

What else should I add to my list? Harvard? Yale? Mayo? Johns Hopkins? Which are accepting of students with slightly lower GPAs? Which ones like to see a lot of ECs/volunteer work (both of which I'm short on....)
