Weak Application? Should I Wait?

I'm currently a junior undergrad at a good state school preparing for the MCAT. I want to apply to med schools in 2013, so I can go straight from senior year into med school, (obviously depending on whether or not I get accepted). The only problem is that I haven't really been able to do much as far as building my application goes. Prior to my transfer into my current school, it was really difficult to get access to any medically related experiences. I'm really passionate about pursuing a career in medicine, but I lack in the experience department. Transferring and having access to so many more opportunities has been wonderful, but I still feel "behind" compared to some of my other pre-med classmates.

What I've done so far....
--4 yrs of volunteering at a therapeutic horse riding center for disabled people
--45 hrs volunteering in the SICU of a local hospital
--competitively train/show horses, play sports, etc.
--currently working 12 hrs/week in a medically related genetics research lab
--recently joined a medical club on campus and plan on getting pretty involved with that

I want to get more hospital experience, but my school has a randomized lottery system, making it difficult to get any internship unless you land a good registration date. (I do plan on finding something on my own next quarter anyways).

If I were to have a decent MCAT score/GPA, continue my research work, (also with the possibility of getting published), and get some more hospital/clinical hours, would this be enough to apply to med schools with? And I'm not talking Harvard, Stanford, top tier schools etc. but more like some of the UC's and Texas schools.
