MD & DO Taking Two Years Off 3.6 cGPA, 3.58 sGPA

Hey so I'm graduating this June and have been planning to take two years off after school to:

1. Work a relevant job (pay off student debts, make some spare money). I didn't get a scribe position I applied for but I'm going for it again.
2. Continue volunteer research at my school.
3. Volunteer in my community
4. Travel
5. Take some community college science courses

During those two years I'm hoping that

-I might get published (not likely) with my PI
-I can volunteer somewhere for an extended period of time over seas (2 months). I love to travel anyway, so hey why not do something good while I'm out there
-I continue with my hospital internship with basic patient care
-I have a job for the summer as a paid intern to help run a behavioral treatment camp for ADHD and autistic children
-I continue to take science courses at my community college to build my GPA up a little bit more and cause I like being in school

I'll be studying for my MCAT the entire first year I'm out of school and taking it sometime spring of next year or in the summer if I need a re-test.

After that, I'll be applying and hopefully entering as the class of 2016.

After this last school term I'm hoping my cumulative GPA will be 3.60, BCPM 3.58. I'm shooting for a 30-32 on the MCAT.

What do you guys think? I feel like a very standard candidate for medical school and while my dream come true would be to get into UCSF I doubt that's going to happen. I'm interested in D.O. schools anyway, but don't have any preference besides location of school.
